I was away from the kitchen the day Jian made this palak for our Palak Paneer and Palak Chicken. Later, my dad called. “How was your day?” he asked. “Good. I was home today.” “And Jian?” “He was in the kitchen with Yuni.” “I heard,” he said. “Who tastes the food?” “Jian does.” A brief pause. “Wow.” And he really does. He tastes. He cooks. He cleans. He even leads the team when needed. He’s been part of Masala Mandala since day one. We’ve all spent countless hours developing the hard skills that make great food possible. But the part I’m most grateful for isn’t the skill—it’s the values. Masala Mandala’s values aren’t something he follows. They’re part of who he is. So when he makes decisions in the kitchen, cares for the food, or supports the team, he’s not following a checklist. He’s simply being himself.
