Gulab Jamun is a milk-solid-based dessert often eaten at special occasions such as festivals, birthdays, and weddings. Traditionally, milk is heated over a low flame until all the water has evaporated, leaving a milk solid referred to as ‘khoya’. The khoya - or, in modern recipes, dried or powdered milk - is then kneaded into a dough with a bit of flour, deep-fried in oil or ghee, and served in a light sugar syrup flavored with cardamom, rose water, kewra(a sweet, fragrant oil), or saffron. It also can be garnished with nuts such as almonds, pistachios, and cashews to enhance the flavor.
